Ingredients for Chandrakala
For Dough
- 2 Cup (250 gram) Maida
- 1/2 Cup (60-65 gram) Ghee
- 1/2 cup Water
For Stuffing
- 1 Cup (100 gram) Mawa (Roasted in a pan 2-3 min)
- 1 Cup (100 Gram) Grind Sugar
- 1 Cup Grated Coconut
- 15-20 Kismish (Resine)
- 5-6 Pista (Fine Chopped)
- 5-6 Cashew (Fine Chopped)
- 5-6 Cardamom
Dough Preparation
- Place Maida in big bowl
- Add Ghee
- Mix..Mix
- Add little little water & make a dough
- Dough is ready
- Keep it for Rest 15-20 min
- Meanwhile Let's Prepare - Stuffing for chandrakala
Stuffing Preparation
- Add Roasted Mawa in big bowl
- Add Grated Coconut
- Add Grind Sugar
- Add Raisins
- Add Cashew
- Add Pista
- Add Cardamom
- Mix..Mix..Mix
- Stuffing is ready
Making & Frying Chandrakala
- Need to take 2 small and same size lumps from chandrakala dough
- Flatten the both lumps in round shape via chakla – belan
- 2 small puries are ready
- Put some chandrakala stuffing in one puri’s centre
- Spread few dropes of water in puri’s corner & place another puri on that. Pack both the puri’s very well
- Now with help of thumb and finger lock the puris corner and give the chandrakala’s shape
- Prepare all the chandrakala in same manner
- All chandrakala's are Ready - Lets fry those
- Take oil in heated Pan
- Place the chandrakala's in medium heated oil
- Flip & fry Both Side
- Once chandrakala Turned - Golden Brown
- Take it Out
Making Sugar Syrup for Chandrakala
- Add 2 Cup Sugar in Pan
- Add 1 Cup Water & Stir
- Stir well
- Sugar disolved Completely - Cook 5-6 min
- Add 5-6 Elaichi (Cardamom Seed) in that
- Add Rose Water (Gulabjal) & stir 2-3 min
- Sugar syrup is ready - it should be thick(2 String syrup)
- Add few drops of lemon - To avoid the crystlalization
- Place all the chandrakala in syrup & coat them all
- Once Syrup get absorbed by chandrakala - take them out
- Garnish Chandrakala with Pista
